Banana Nut Bread


I erased the other recipe, it sucked compared to this one.


4-6 mashed bananas
2 c all purpose flour
2 large eggs
1/2 c white sugar
1/2 c light brown sugar
1/2 c oil
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1 c crushed pecans

Preheat oven to 350.
Spray Pam into loaf pans, I use the 3 for 1.00 size you get for Walmart, (aluminum throw away, you can re-use them a bunch though). This is the cooking time I give for, may take more or less depending on if you use a big loaf pan or mini loaf pans.



Mix together sugars, oil and eggs.
Add mashed bananas, mix more.
Add rest of dry ingredients, mix in.
Stir in pecans.

Bake for about 45 minutes (in pans like I use)

This bread is SO moist and flavorful.
You can wrap it cooled in saran wrap then aluminum foil and freeze it for later.

PUMPKIN ROLL

Pumpkin Cheesecake Roll

3/4 cup flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. pumpkin spice
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup sugar
3 eggs, slightly beaten
2/3 cup solid packed pumpkin
1 cup walnuts, chopped (optional)

Cream Cheese Filling:
1 cup confectioners sugar
1 (8 oz.) pkg. cream cheese, softened
6 Tbsp. butter
1 tsp. vanilla
Beat together until smooth; set aside

Grease a 15 X 10 X 1 jellyroll pan. Line with wax paper. Grease and flour wax
paper. Sift dry ingredients. Beat eggs and sugar until thick and fluffy. Beat
in pumpkin. Stir in dry ingredients. Pour into pan; sprinkle with nuts
(optional). Bake at 350 degrees for 15 minutes. Loosen cake around edges.
Invert onto a damp, clean, kitchen towel, dusted with powdered sugar. Peel off
waxed paper. Roll up cake & towel together. Place seam side down on wire rack.
Cool completely. Then unroll cake, remove towel & spread with filling. Reroll
cake. Wrap with aluminum foil and refrigerate overnight. Slice and serve cold.

PEANUT BUTTER PUMPKIN BREAD

*This is one of my guy's favorites and Drew hates Pumpkin stuff!~

3 cups sugar
1 can 15 oz solid pack pumpkin
4 eggs
1 cup vegetable oil
3/4 c water
2/3 c peanut butter
3 1/2 cups all purpose flour
2 tsp baking soda1 1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg(you can use 2 or 3 tsp of pumpkin spice if you don't have the above two, tastes the same!)
In a mixing bowl, combine the sugar, pumpkin, eggs, oil, water and peanut butter: beat well.Combine the flour, baking soda, salt, cinnamon and nutmeg. Gradually add to pumpkin mixture; mix well.Pour into 2 greased loaf pans or a cake size pan. (so far it makes more than it says, I am trying 4 mini loaf pans next time).Bake at 350 for an hour our so our until toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.
